Banana Bread

This is it, the moment you didn't know you were waiting for. My (almost) famous banana bread recipe is here!


Ingredients (Makes about 12 servings)

  • 1 3/4 c all purpose flour (can use whole wheat flour instead)

  • 4 Tbsp Flax seed meal

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 2 scoops protein powder (I use Intek strawberry banana protein - link below)

  • 5 medium bananas (over-ripe, kinda mushy)

  • 6 oz Fage 0% Greek yogurt

  • 1 large egg

  • 2 large egg whites

  • 1 tsp vanilla extract

Directions

Pre-heat oven to 350 degrees. Prepare a bread pan (could also make these into muffins I suppose) by greasing the bottom and sides (I use butter), then coating in flour.

Combine all dry ingredients together in large bowl.

In another bowl, mush your bananas with a fork. Add egg/egg whites and mix well. Stir in yogurt and vanilla.

Add the banana mix to the dry ingredients until everything is combined thoroughly.

Pour into bread pan or muffin tins. Bake for about 45 minutes - until a knife or toothpick comes out clean when you insert it in the middle.


Nutrition per slice:

161cal - 25.7g carbs - 1.9g fat - 10.4g protein


This is the PERFECT pre- or post-workout snack! I warm mine up in the microwave for about 30 seconds and then put some butter on it. YUM.
